Apple Ale (Nov 2004)

5 gallon all-grain

  • 10# 2-row pale malt
  • 3/4# 10L crystal
  • 11# apples (Paul Bornais tree)
    • cut into 1/8ths
    • bake for 45 minutes at 350F
    • add to primary
    • use 1 teaspoon pectin enzyme
  • 3/4 oz Cascade (bittering)
  • 1/4 oz Cascade (flavor)
  • 1/4 oz Willamette (flavor)
  • 3/4 oz Willamette (aroma)
  • Kolsch Ale Yeast
