Apple Ale (Nov 2004)
5 gallon all-grain
- 10# 2-row pale malt
- 3/4# 10L crystal
- 11# apples (Paul Bornais tree)
- cut into 1/8ths
- bake for 45 minutes at 350F
- add to primary
- use 1 teaspoon pectin enzyme
- 3/4 oz Cascade (bittering)
- 1/4 oz Cascade (flavor)
- 1/4 oz Willamette (flavor)
- 3/4 oz Willamette (aroma)
- Kolsch Ale Yeast
